beyond the arbor of the grapes!
When fruit is ripe at pugent best, as fall approaches and summer rests.
The fruit it swells and fills with juice, the scent is but devine.
And never shall the sweetest grape be left, to die upon the vine!
Wines from Grape Concentrates
For those who want to make wine without all the work..premium grape concentrates are your answer.
These concentrates can be found at most winemaker's stores. Most come in sizes to make 1 or 5 gallons of wine.This recipe is for 1 gallon and can be used as a guide.
1 Can concentrate
Water to 1 gallon
Sugar to S.G.1.085-1.095(measure on a Hydrometer, also available at winemaking stores)
Acid Blend to .65% tartaric
1 tsp. Nutrient
1/8-1/4 tsp Tannin
1 Campden, crushed
1 pkg Wine yeast
Mix all ingredients EXCEPT yeast in *primary fermentor*
Cover primary
After 24 hrs add yeast
Again cover primary
Stir daily and check Specific Gravity(S.G.)
When S.G. reaches 1.040 or 3-5 days(which ever is first)syphon off into glass secondary or *Car Boy*
Attach airlock into rubber stopper and place into neck of secondary.
When ferment is complete, S.G. down to 1,000 or in about 3 weeks, syphon to clean secondary, *Car Boy*
If necessary for clearing - syphon again in 2 months before bottling.
*Primary Fermentor*, a sterilized 5 gallon bucket with cover to fit tight.
*Car Boy* a 5+ gallon glass jar with a tappered neck to insert rubber stopper and airlock.
All items should be availible at HomeBrewing stores and you can even shop the hardware stores for the Primary Fementors.
